Old map

[edit]

This[1] is a scan of a 1913 Houston map. I want to use a small part of it for an illustration in an article. Anyone know where I should take this question? ←Baseball Bugs What's up, Doc? carrots03:46, 21 November 2017 (UTC)[reply]

WP:CQ is the page for questions, and see also WP:CFAQ. If it was published in the USA before 1923, you can upload it using the {{PD-US}} tag. Tevildo (talk) 07:11, 21 November 2017 (UTC)[reply]

Too much yeast

[edit]

In bread making is there a term for dough that has been allowed to rise / proof too long to the point that the yeast has used up all the nutrients in the dough and it starts to deflate? Is there any use for such dough? 182.253.139.17 (talk) 07:37, 21 November 2017 (UTC)[reply]

This guidance was found by typing the phrase "bread left to rise too long into Google. I hope that helps! --Jayron32 12:09, 21 November 2017 (UTC)[reply]
It's called "over proofing", or sometimes "over proving", but it doesn't happen because the nutrients are used up, it happens because the holes become so large that they connect to each other and allow the gas to escape, as well as breaking down the gluten structure by stretching it too far.
