The Po'Boy is a New Orleans staple and no matter the history, the po'boy is here, always evolving as New Orleans restaurants develop creative culinary recipes. The po'boy began as a meat and bread sandwich, but now restaurants push the limits of New Orleans tradition. One example is the "Thanksgiving Po'boy" from Parkway Bakery and Tavern.
