Alakena is a traditional termite-based dish consumed by the Lango people in Northern Uganda. The traditional seasonal delicacy is prepared between April and June, when the anthills prepare to release both winged termites and soldier termites locally known as "Ngwen".

Harvesting process

Harvesting is usually done in the night and early mornings.[1] Holes are dug around the anthill, and termites and white ants are collected as they come out of the anthill.

The insects are dry fried or boiled, and then ground together and formed into a ball-shape for consumption.[1]
