Gorse is a fine dining restaurant in Pontcanna, Cardiff, Wales, serving modern Welsh cuisine. Opened in 2024 by Welsh chef Tom Waters, it was awarded a Michelin star in 2024, the first Cardiff restaurant to achieve one.
History
[edit]Tom Waters, a chef from Newport with experience in London restaurants, operated pop-ups in Cardiff and then opened Gorse in a former coffee shop in Pontcanna on 28 May 2024.[1][2][3][4] Waters has said he named it after the coastal plant gorse "because of his happy childhood memories at the Welsh seaside."[5] In February 2025, it was awarded a Michelin star, the first for a restaurant in Cardiff.[2][4][5][6][7]
Restaurant
[edit]Gorse is a small restaurant, with a capacity of 22 diners seated at wooden tables in both chairs and booths. Designed by Karna, a local agency, it has an open kitchen.[1][2] The cuisine is modern Welsh, using local ingredients[1][6] (organically or biodynamically produced).[3] The beverages include a selection of meads.[8]
