Äggost (pronounced [ˈɛɡˌɔst]; Swedish for 'egg cheese') is a Swedish dish made from milk and eggs that is traditionally served on festive occasions.[1]

Preparation and serving

[edit]

Äggost is prepared from milk, eggs, vinegar, and fermented milk or sour cream, which is simmered slowly until it curdles. Then, the mass is drained in an often star-shaped mould with holes in the bottom. The mass is scooped into the mould, possibly interspersed with caster sugar. The dish is traditionally served on a smorgasbord or as breakfast, for example, with pickled herring. Nowadays, Äggost is often eaten as a dessert with caster sugar, cinnamon or cream. Popular types of jam are blackberry jam and cloudberry jam.[2]

Bohuslän

The dish is typical for Bohuslän, and according to tradition, it belongs to the festive or gathering dishes.[3]
