Ben Hur opened on Broadway on November 29, 1899, and her resignation on November 25, 1899 preceded the opening. There are several references to the actresses who replaced Grace George in the role of Esther.
Interestingly, the original source "Plays of the Present"", does mention on page 39 that Grace George was replaced first by Nellie Thorne and then by Ellen Mortimer, in the role of Esther -- albeit it seems (to me) to imply that Grace George did perform the role before being resigning.
This is my first suggestion to Wikipedia, and, as a newbie, I am NOT making the deletion myself, rather I would ask for an experienced editor to see if this suggestion has merit, and delete (or not) accordingly.
