Vagharelo bhaat is a spiced and tempered rice dish from the state of Gujarat in India.[1] Vaghar, in Gujarati language means tempering and Bhaat refers to boiled rice dish. Vagharelo bhaat is commonly cooked as a comfort food in Gujarati households.

The dish is made with cooked basmati rice (preferably day-old rice), ghee or oil and spices like mustard seeds, cumin seeds, asafoetida (hing), turmeric powder, red chili powder, salt, and chopped vegetables (e.g., peas, carrots, cauliflower, potatoes). Sometimes, lentil fritters and chhena are also added to the dish.[2]

To prepare Vagharelo Bhaat, heat ghee or oil in a pan and add mustard seeds, cumin seeds, and asafoetida. Then, add chopped vegetables and sauté until tender. Finally, add cooked rice, turmeric powder, red chili powder, and salt, and stir-fry the mixture for a few minutes until the flavors meld together.[3]
